- 1 cup dried red lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 6 cups vegetable broth
- 1 tsp cumin
- Salt and pepper to taste
Preparation Steps
- 1In a large pot, sauté onion, carrots, celery, and garlic until softened, about 5 minutes.
- 2Add cumin and stir for 30 seconds until fragrant.
- 3Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
